Plantain and Spinach/Kontomire Puree

There is so much you can do with plantain and everyone loves plantain. Because, why not? It is sweet and goes with literally anything. I have a few plantain ideas in the post Plantain Meals but here’s a recipe that’s specially dedicated to kontomire/ spinach depending on where you are in the world.

I don’t need to tell you the benefits of greens in our meals and I think our babies can benefit too. Spinach can be given to babies 6 months up as long as it is cooked and the baby has started solids. Kontomire (Taro leaves) can also be given to children six months up. If your baby has a sensitive stomach, I would recommend you wait until 8 months.

For this puree, you will nee:

1 plantain finger
1 big kontomire leaf/ about 15 baby spinach leaves
Half a tomato
A quarter of a large onion/ half of a small onion
A blender

Recipe

  1. Peel and cut the plantain into small pieces.
  2. Put the cut plantain together with the onion and tomato into a saucepan and cover with water.
  3. Boil until plantain is soft.
  4. Add the spinach/ kontomire and cook for one more minute.
  5. Take it off the heat and let is cool.
  6. Put all cooked ingredients in a blender, add a little water and blend until smooth.
  7. Add more water for a lighter consistency.

This puree can be served as is or you can add a bit of red oil and eggs for older babies. Follow below steps to add some yummy goodness to this recipe.

Put a pan on fire and put in 2 tablespoons of red oil
Add a serving portion of the plantain and spinach puree and stir till the oil is mixed with the puree.
Beat on egg and stir into the mixture while it is on fire (on low heat).
Stir until the egg is fully incorporated, turn off the heat and serve after it cools.
