Yam & Abom puree

Yams and garden eggs are very common in every Ghanaian home. If you can eat it, what stops your child from doing so.

As for garden egg, we know it is a vegetable. it is also a very good source of dietary fiber.

Ingredients (Quantities depend on how many servings you would want)

1/2 Yam
4 Large Garden Eggs
1 Onion
1 Clove of Garlic
1/2 a piece of Ginger
1 small pepper (for 9 months & over)
3 Tablespoons Agushie powder (Melon Seeds)
Smoked Tuna/ Salmon (Optional)
Red palm oil
Salt

How to;

Peel the yam, wash and cut into small cubes in a saucepan
Cut the stalk off the garden eggs and divide into 4 pieces
Cut onion into four pieces
Add the garden eggs and onion to the saucepan with the yam
Add your spices (ginger, garlic, pepper)
Add water till it covers all ingredients and boil till yam is soft or cooked
Drain the ingredients and allow to cool

When it is cool, pour them into a blender with your smoked tuna or salmon and add the drained water in bits until you get a fine puree. Make sure you don’t pour too much water, otherwise, you will get a runny meal
For older babies with teeth, you can blend the other ingredients but mash the yam.

Now put another saucepan on fire and pour about 10 tablespoons of oil.
Mix your Agushie powder with water to make a thick paste and pour into the hot oil.
cover the pan and let the agushie cook well.
Now pour your mixture into the oil with agushie and stir till they all mix up nicely. Add a little salt to taste.

Voila! Just typing down this recipe makes me hungry.

Note that the yam in this recipe can be replaced by cocoyam, sweet potatoes or even Irish potatoes. And the garden eggs can be replaced with kontomire.
