Baby Jollof

The theme of the recipes on this page is is foods we eat at home everyday. We want to get or babies used to everyday Ghanaian meals so that they develop the taste buds for them as they grow. One meal we can’t leave out is jollof and we know for sure that jollof will be on the dining table in any Ghanaian home at least once a week.

This recipe is absolutely delicious and I have no doubt that your baby will love it. I love this recipe because I used boiled rice which I always have at home so prep time is very short. Brown rice is healthier tan white rice so if you can, i would recommend using brown rice but white rice is also fine.

This recipe also calls for bell peppers because they are sweet and are packed with flavor. You can also add carrots to enrich this meal. The red bell peppers are known to be the most nutritious because they have been on the vine longest. The bell peppers start off green, then ripen to yellow before red. The red ones are packed with more beta carotene and vitamin C than the rest so definitely use some red ones. The bell peppers with the cinnamon will provide all the sweetness your baby needs in this meal.

I would recommend this for babies 8 months and older or babies who have already been introduced to solids. For younger babies, I would recommend, doubling the milk or water quantity for blending to make the puree smoother.

For this recipe you will need:
– Half an onion/ one small onion
– A quarter red bell pepper
– A quarter yellow bell pepper (you can also use the green)
– One small tomato
– Half a cereal bowl of boiled rice
– 2 tablespoons of olive oil
– 100 ml of breastmilk or water
– 1 teaspoon of cinnamon

Method

Chop all the vegetables. In a small pan over medium heat, pour your oil and cook your onions, then tomatoes, then bell peppers until soft. Stir often and add a little water to lengthen the cooking process. When it cooks and softens, add the cinnamon and stir.

Take the stew off fire and let it cool. Pour the stew in the blender, add your rice and milk, then blend till smooth. If you want a runnier consistency, add more milk or water when blending.
