Ripe Plantain Meals

Everyone loves ripe plantain and so will your little one. It comes with its own natural sweeteners and can be eaten with anything. It is rich in Vitamin C and Potassium. Read more about its nutritional benefits here. Again, it is an easy find on the market and cost-effective too (when it is in season). There are various ways to prepare a ripe plantain meal for your little one. Here are a few combinations to try;

Ripe Plantain with Garden Eggs
Simply boil one finger of plantain together with two big garden eggs, one small tomato, one small pepper (optional), boiled fish or fish powder (also optional)
cover all ingredients in water and cook for about 10 minutes or until soft and leave to cool. Chop one small onion or half of a big onion and blend together with the boiled ingredients. (Add a little water [ideally the one used in boiling to assist in the blending)
Pour 4 tablespoons of red oil into a saucepan and add your puree. Cook on low heat for 5 minutes .

Ripe Plantain with Carrots
Boil the on finger of ripe plantain and 3 fingers of large carrots (You can add more carrots) for 20 minutes. Leave to cool and blend with water to your preferred texture.

Ripe Plantain with Groundnut Soup
For babies from 9 months, you do not always have to blend into a fine puree. You can simply mash the boiled plantains and add soups or sauces. Groundnut soup and plantain make a delicious pair. Or simply boil plantain and blend it with groundnut soup.

Ripe Plantain and Kontomire
Boil one finger of plantain together with two leaves of Kontomire, one small tomato, one small pepper (optional), boiled fish or fish powder (also optional)
cover all ingredients in water and cook for about 20 minutes or until soft and leave to cool. Chop one small onion or half of a big onion and blend together with the boiled ingredients. (Add a little water [ideally the one used in boiling] to assist in the blending)
Pour 4 tablespoons of red oil into a saucepan and add your puree. Cook on low heat for 5 minutes .

You can store your plantain meals in small bowls in the freezer and defrost in the refrigerator overnight.
